Tappa panoramica tra la valle delle due fiumare, Assi e Stilaro, in cui si collocano due splendidi borghi, Guardavalle e Bivongi. Partendo da Guardavalle si intraprende il cammino verso il piccolo borgo di Bivongi, per una strada di campagna quasi a picco sulla vallata dell\u2019Assi, fiumara dal letto largo quasi completamente asciutta nel periodo estivo. Il sentiero, circondato prevalentemente da ulivi, lecci ed eucalipti, \u00e8 accostato da roccia sedimentaria dove \u00e8 possibile, in primavera, avvistare il gruccione cavare le pareti per la costruzione del suo nido. Raggiunto il fondo valle e guadato il fiume, si sale per una strada forestale che condurr\u00e0 al monastero di San Giovanni Theristis, risalente all\u2019XI secolo con peculiarit\u00e0 architettoniche bizantine e normanne: un\u2019oasi di preghiera e tranquillit\u00e0, dove dimora una piccola comunit\u00e0 di monaci ortodossi romeni. Si riprende il cammino verso Bivongi e prima di raggiungere la fiumara Stilaro, sulla sinistra sar\u00e0 possibile ammirare i resti del Monastero SS. Apostoli di origine basiliana che nel 1096 divenne propriet\u00e0 della Certosa di Santo Stefano del Bosco. Raggiunto lo Stilaro, attraversando il ponte \u201cVina\u201d, sulla destra si potr\u00e0 ammirare il paesino di Bivongi alle falde del monte Consolino.<\/p>\n\n\n\n
In inverno se \u00e8 difficile attraversare la fiumara Assi si consiglia di seguire la strada Provinciale per raggiungere Bivongi.<\/p>\n\n\n\n
Come suggerisce il nome, il paese di\u00a0Guardavalle\u00a0<\/strong>svolse nel \u2019500 la funzione di punto di vedetta, quando la costa era presa d\u2019assalto dai pirati. Da visitare la Chiesa Madre con gli splendidi lavori d\u2019intaglio e la Madonna del Rosario di Tommaso Martini.<\/p>\n\n\n\n Il centro storico di\u00a0Bivongi<\/strong>\u00a0si sviluppa in altezza, tanto che le case arrivano ad avere cinque piani costituiti spesso da una sola camera, collegati l\u2019un l\u2019altro da scalinate esterne. Addossate le une alle altre, le case sono separate da caratteristiche viuzze strette, le \u201cviniadi\u201d. Non mancano palazzi imponenti, quali edifici appartenuti a proprietari terrieri (essendo feudo della Certosa di Serra San Bruno, Bivongi non aveva \u201cnobili\u201d in senso stretto). L\u2019Abate di Serra San Bruno si recava a Bivongi una volta l\u2019anno per riscuotere i tributi e dirimere le questioni pi\u00f9 importanti; per l\u2019occasione si teneva un grande mercato, che oggi rivive nel il periodo estivo con la manifestazione del \u201cMercato della Badia\u201d, durante il quale vengono riaperte le botteghe artigiane, rievocati gli antichi mestieri (tessitura del baco da seta e lavorazione della ginestra) e preparati i piatti tipici della tradizione bivongese (pasta con sugo e carne di capra, zeppole) accompagnati dagli squisiti vini DOC dei famosi vigneti di Bivongi. It is highly recommended to pay a visit to the monastery of San Giovanni Theristis, dating back to the XI century, featuring interesting Byzantine and Norman architectural details: an oasis of prayer and tranquillity, where a small community of Romanian orthodox monks still lives to this day.<\/p>\n\n Panoramic stage across the valley of the two fumare, Assi and Stilaro, where hikers will discover the two beautiful villages of Guardavalle and Bivongi. The trail starts in Guardavalle and moves towards Bivongi across a country road on a sheer cliff over the valley of the Assi, a fiumara with a wide riverbed almost entirely dry during summer time. Along the way are olive trees, holly oaks and eucalyptus. The mountain sides are of sedimentary rock and, in spring time, it is possible to catch sight of the European bee-eater carving its nest in the stones. Upon reaching the valley floor, after crossing the river, the trail goes uphill on a track that leads to the monastery of San Giovanni Theristis, dating back to the XI century, featuring interesting Byzantine and Norman architectonic details: an oasis of prayer and tranquillity, where a small community of Romanian orthodox monks still lives to this day. Back on the track, hikers will continue their journey towards Bivongi and will get the chance to visit, just before the fiumara Stilaro, the remains of the Basilian monastery of S.S. Apostoli (property of the Chartreuse of Santo Stefano del Bosco since 1096). At the Stilaro, crossing the \u201cVina\u201d bridge, hikers will see on their right hand side the little village of Bivongi.<\/p>\n\n During winter time, if crossing the fiumara Assi proves to be too difficult, it is recommended to follow the SP road to Bivongi instead.
\nIn inverno se \u00e8 difficile attraversare la fiumara Assi si consiglia di seguire la strada Provinciale per raggiungere Bivongi.<\/p>\n\n As suggested by its name, the village of\u00a0Guardavalle<\/strong>\u00a0(\u201cLook\/valley\u201d<\/em>) was used in the 16th century as a strategic lookout post to spot potential pirates\u2019 raids along the coast. The main church, with its exquisite carving decorations, and the Madonna del Rosario di Tommaso Martini are worth a visit.<\/p>\n\n \u200bThe city centre of\u00a0Bivongi<\/strong>\u00a0underwent a vertical architectural development throughout the centuries, so much so that houses have up to five floors, often made up of a single room, linked together via external sets of stairways. All crammed together, the houses are separated by characteristic narrow alleys called \u201cviniadi\u201d. The village, however, isn\u2019t short of imposing palaces, like the building belonging to ex land owners (even though, being part of the feud of the Chartreuse of Serra San Bruno, there was no \u201caristocracy\u201d here per se). The Abbot of Serra San Bruno would come to Bivongi once a year to collect the taxes and take care of the most pressing issues. The people of Bivongi would organise a great market for the occasion. The same tradition is kept alive every summer with the festival\u00a0\u201cMercato della Badia\u201d,<\/em>\u00a0during which artisanal shops are opened and all ancient crafts are celebrated (such as silkworm weaving and broom manufacturing). It is also a chance to taste some of the most typical local dishes (like pasta with goat meat and\u00a0zeppole<\/em>) accompanied by exquisite DOC wines from the renowned vineyards of Bivongi.
