Dalla vicina colonia romana di Luni, parte degli schiavi fu trasferita per estrarre il marmo di ottima qualit\u00e0 che veniva inviato a Roma per abbellire palazzi e monumenti.<br \/>\nLa popolazione locale e gli schiavi, successivamente, si unirono, dando origine a una forte comunit\u00e0 montana.<\/div>\n<div>Sviluppatasi soprattutto sul lavoro delle cave e con una storia ricca di lotte continue per il miglioramento delle dure condizioni di lavoro in questo regno degli anarchici, negli ultimi anni i nuovi metodi estrattivi del marmo hanno portato al calo del lavoro nelle cave. Successivamente l\u2019economia di Colonnata si \u00e8 risollevata grazie alla gastronomia con la riscoperta del lardo.<\/div>\n<div style=\"text-align: left;\">Il <strong>lardo di Colonnata<\/strong> deve la sua eccezionale bont\u00e0 alla stagionatura, la cui origine risale intorno all\u2019anno Mille.<br \/>\nIl lardo viene prodotto prendendo lo strato grasso della schiena del maiale e viene posto in una <em>conca,<\/em>\u00a0scavata in un blocco di marmo poche ore dopo la macellazione. La conca viene strofinata con aglio e aromi, sale naturale in grani, pepe nero, aglio fresco, rosmarino, salvia e altre erbe aromatiche; successivamente la conca viene riempita a strati alternando il lardo al sale e agli aromi per essere poi coperta da una lastra di marmo. The quarries of Colonnata are by far the most imposing of the Apuan area.<\/p>\n<p>Marble isn\u2019t the only thing associated with this place, even though it is connected: the other one is the famous <strong>lardo di Colonnata<\/strong> (lard), a traditional salami made with pork lard seasoned in basins of Carrara marble. It has been awarded the IGP quality certification and is so special because of the storage and for its flavour: there is sea salt, ground black pepper, fresh rosemary sprigs and garlic cloves.<\/p>\n<p>The village has kept part of its original historic features that were primarily marked by the use of marble. You can admire the north gate that is the access to the village, which belonged to the medieval walls now vanished; the <strong>square paved with marble<\/strong> with a modern sculpture dedicated to the Christ of the miners; the bell tower with clock and stones at sight; the parish church of the sixteenth century dedicated to Saint Bartholomew. It can be reached from the old road that passes through the villages of Vezzala and Bedizzano.<\/p>\n<p>The road is very winding and sometimes steep, but this is not a problem for the car, even if not 4&#215;4.
