Questa struttura \u00e8 deputata ad una particolare lavorazione della castagna, tipica di Capranica Prenestina, la \u201cmosciarella\u201d.<\/p>\n\n\n\n
La fama di questa castagna ha profonde radici nella storia, infatti veniva gi\u00e0 citata da Catone nel suo \u201cDe Agricultura\u201d. Questo frutto ha svolto un ruolo fondamentale nell\u2019alimentazione delle comunit\u00e0 locali per molti secoli. Una leggenda popolare dice che siano state l\u2019unica fonte di sopravvivenza dei Prenestini durante il lungo assedio di Silla. La prima forte spinta alla coltivazione strutturata della castagna si \u00e8 per\u00f2 registrato in epoca medievale, grazie all\u2019impulso della contessa Matilde di Canossa.<\/p>\n\n\n\n
La castagna prenestina si caratterizza per i suoi frutti piccoli dal sapore dolce.<\/p>\n\n\n\n
Una pratica molto diffusa e consolidata nel tempo per la conservazione delle castagne nel territorio di Capranica Prenestina \u00e8 l\u2019essiccazione, un procedimento lungo da cui si ottengono delle ottime mosciarelle, castagne secche private delle bucce.<\/p>\n\n\n\n
Le castagne raccolte vengono distribuite su un graticcio all\u2019interno di queste casette (o essiccatoi), fino a formare uno strato uniforme di circa 70 centimetri e vengono sottoposte ad un lungo processo di affumicatura che dura circa un mese, fino a quando il frutto non risulta completamente essiccato.<\/p>\n\n\n\n
Il calore ed il fumo disidratano le castagne impregnandole di sostanze antisettiche, donandogli inoltre un delicato aroma di fum\u00e9.<\/p>\n\n\n\n
Conclusa l\u2019essiccazione le castagne vengono spinte attraverso un foro presente alla base dei graticci. Il processo successivo \u00e8 la battitura che permette di separare il frutto dalla buccia secca.<\/p>\n\n\n\n
\u00c8 nella tradizione locale che queste castagne vengano utilizzate bollite in acqua o latte oppure con l\u2019aggiunta di aromi e spezie per la preparazione di minestre ed altre pietanze. This structure is dedicated to particular processing of the chestnut, typical of Capranica Prenestina, the “mosciarella”. <\/p>\n\n
The fame of this chestnut has deep roots in history, in fact, it was already mentioned by Catone in his “De Agricultura”. This fruit has played a fundamental role in the nutrition of local communities for many centuries. A popular legend says it was the only source of survival of the Prenestini during the long siege of Silla. The first strong push to the structured cultivation of chestnuts was however recorded in the Middle Ages, thanks to the impulse of countess Matilde di Canossa. <\/p>\n\n
The Prenestina chestnut is characterized by its small fruits with a sweet taste. <\/p>\n\n
A very widespread and consolidated practice for the preservation of chestnuts in the territory of Capranica Prenestina is the drying, a long process from which excellent mosciarelle are obtained, dried chestnuts with their skins removed. <\/p>\n\n
The harvested chestnuts are distributed on a grid inside these small houses (or dryers) until they form a uniform layer of about 70 centimeters and are subjected to a long smoking process that lasts about a month until the fruit is completely dried. <\/p>\n\n
The heat and the smoke dehydrate the chestnuts impregnating them with antiseptic substances and giving them a delicate smoky aroma.<\/p>\n\n
Once the drying process is over the chestnuts are pushed through a hole in the base of the trellis. The next process is the beating which allows the separation of the fruit from the dry skin. <\/p>\n\n
It is a local tradition that these chestnuts are used boiled in water or milk or with the addition of aromas and spices for the preparation of soups and other dishes.
